Assimilation, in biology, the process by which plants and animals utilize foods in the building of living tissue. It is part of the process of metabolism. Food substances (broken down by the digestive process) and substances absorbed from the atmosphere are carried to animal cells by the blood and to plant cells by the sap. The cells then build new living matter out of these substances.
