Salsify, a biennial root vegetable native to southern Europe. It is also called oyster plant and vegetable oyster. The thick root is about 12 inches (30 cm) long and 2 inches (5 cm) in diameter and is grayish white in color. The plant can grow to a height of about 4 feet (120 cm). The light purple flower heads are large, and the leaves are long and grasslike. Salsify is eaten as a vegetable and used as a relish. It grows wild in southern and central Europe; it is also grown in England, Spain, the United States, and Canada.
