Glycogen, or Animal Starch, a carbohydrate. It is formed from glucose, a type of sugar taken into the body in foods, and is stored in the liver and muscles. It is later reconverted into glucose as needed to maintain a constant blood-sugar level. During short periods of strenuous activity, energy is released in muscle tissue by the conversion of glycogen into lactic acid.
